Mushroom Soup

 

1 lb mushrooms, chopped

1 small onion, finely chopped

2 oz butter

2 oz flour

1 qt liquid containing 1/2 milk and 1/2 chicken broth or water, your choice

Thyme, salt and pepper to taste

 

Melt butter in a saucepan, add onion and cook until onion is transparent. Add mushrooms and cook them until they have all darkened and given up most of their water. Stir a lot. When most of the juice has cooked away add the flour and stir it in until the white flour is no longer visible and has turned into a paste. Add the liquid, stirring the whole time, until liquid comes to a boil. Turn down to medium low and cook for another 20 minutes or so. Stir occasionally. Serve hot. Good with soda crackers.
